It was wonderful chunky and HOT!!!
I have only cooked with leeks one other time and that was because Nancy had found a recipe for a TwitterCook some months ago. I still don’t use them often, but I do enjoy the flavor they add to different dishes. This soup called for 3 leeks and I thought it would be too onion-y, but the leeks are very mild in flavor and just enhanced to the taste of the soup.
Topped with some shredded gruyére and chopped chives, it was a perfect soup for a very unseasonably cold night here in the Deep South!!
Dorie did say we could make the soup chunky or smooth, so I removed part of the soup and pureed it in the Food Processor (since my immersion blender drowned a few days before!!) We ended up with a nice smooth textured soup with plenty of chunky pieces of potato. Almost a potato chowder. One thing that surprised me about this soup – it only used ONE potato. Most potato soups use lots of potatoes. THe one potato, with all the leeks, was perfectly potato-ey.
The next time I make potato soup, it will be this one. Too good not to make again.

Looks wonderful…I will get to this one for sure…onions/leeks are calling my name, loudly, just need to get to the store and when we dig ourselves out from all this snow, and Matt’s weekend of concerts are over, I am thinking this is on the menu next week. Along with all the other December recipes. Yours looks wonderful.

Looks great! We really enjoyed this soup, too. I pureed mine with the immersion blender. I wish I had left it just a bit chunkier. Can’t wait to make it again.

I have all the stuff for this one, I just need to get it made! I love leeks, so I’m sure I’ll enjoy this. Your soup texture looks just right. And good idea to add the cheese on top. =)

Yum! It looks so delicious. I used my immersion blender, but made sure to leave some chunky potatoes. Next time I won’t forget the milk.

I love cooking with leeks. They demand a bit more cleaning time because of the dirt that gets trapped between the layers, but their mild taste is addictive.
I made the soup the first week and we loved it. So unassuming, but so delicious.
I am glad you liked it.
And you have to get another one of those wonderful immersion blenders. I could not imagine my cooking life without it!

Another cookbook to add to my list. I do love leeks. This looks like one great soup.
