Monday we arrived home late and tired. We had been out of town just for the day and we didn’t really feel like cooking – at all. But going back into town for take-out was not going to happen. Thank goodness for Gaye’s choice this week for Wednesdays with Donna Hay.
The best possible solution – a simple supper of eggs. In the form of Donna’s Bacon and Roasted Tomato Omelette. While Hubs enjoyed just fried egg sandwiches I enjoyed a small omelette where the bacon is fried and then the egg/chive mix is poured over the bacon in the pan and cooked. The recipe calls for a topping of roasted tomatoes and arugala. Well, you KNOW how much I LOVE tomatoes so I just topped mine with some melty cheese.
Light, tasty, just right for a quick meal.

Melty cheese looks wonderful anytime! Those tomatoes were so delicious, though, I think I loved those on it the best! Yours looks delicious, and just the thing for a nice supper after a long day.

Welcome home Margaret. I picked this for the same reason as you liked it – I didn’t get home until Sunday evening and there was no way I was going to get something full on done in time for this week. Glad you liked it – I think the egg and chive omelette was perfect in itself.
