Tonite I needed a simple, somewhat healthy way to end the evening. Dorie’s baked apples fit the bill.
This is not your typical baked apple which is cored, filled with goodies and popped in the oven for oven. Dorie has us slicing the apples thinly and then layering the slices with spiced sugar, orange zest, and butter. One Gala apple filled one cup just right. And then they cooked down quite a bit…
which means I ended up with only about 1/2 a cup full of apple. Good thing I could fill up the emptyness with some lightly sweetened whipped cream.

They do shrink like crazy. They look perfect in a cup! Brilliant way of serving them!

Oh, my, this looks delicious…might have to try this just for the thrill factor as well as it sounds intriguing technique-wise. Maybe make and post late for next week as there is no way I am making chicken liver anything for next week.

They were delicious weren’t they? I also wish I’ve put more apples in the ramekins. After 4 hours of baking the apples shrunk but they tasted delicious!!!!

Now that’s an idea. I have a large crockpot. Are you thinking of filling the ramekins (with LOTS of apple slices), covering them, placing in a crockpot and weighting them down before putting on the lid? That sounds genius to me and an easier way to deal with long hours of cooking something. Yours do look lovely in the tea cup.

I think the trick is to pile those apples up high to compensate for all the shrinking. I saw that on Susan of the Little French Bakery’s post. I had major shrinkage as well. Still awfully delicious!

I love that you made these in the cup- it looks just lovely. I fell into the melted wrap category as well. Bummer. I think I would actually like these best if there was some crust involved
