In May of last year I was just finishing up catching up with all the TWD recipes I missed. Three of them were Madeleines. I had not made them before because I did not have the pan. Now I am always looking for reasons to make them just so I can use my single-purpose pan!! How perfect is it that this week’s Baking With Julia pick is Madeleines
I Love the shape of these little cakes/cookies. These are made with a Génoise batter which was new to me. Others I have made were more of a cake batter.
These were rather plain so I decided to dress them up a smidge. I dipped some in chocolate
And some I sprinkled with Cinnamon Sugar
AS much as I like love chocolate I liked the cinnamon sugar ones better.
And while I tried to like these madeleines they aren’t my favorites. They seemed dry and awfully dense. Ah, well.

Which is why I didn’t care for them. Too dry compared to others I have made.

I thought they would taste better with chocolate too! The cinnamon sugar was a great idea too!

Sorry these didn’t pass your stringent tests! 🙂 They both look wonderful – I think I’d like the cinnamon ones too. Very light and airy – so glad you now have a madeleine pan!

These aren’t my favorite either. Great idea to dip them in chocolate and the cinnamon sugar. They needed some flavor. I really liked Dorie’s madeleine recipe from AMFT so I will have to try some from her baking book.

I’m with you as far as their being dry. Love the solutions you came up with. These were my very first, and I am anxious to try other versions. Yours look beautiful.

I didn’t make these this time, but loved them (and bought a pan just to make them) back when we did them with BFMHTY. Yours look great!
