2 cups AP flour
1 Tbl baking powder
4 Tbl (1/2 stick) unsalted butter
1/4 cup sugar
2 tsp fresh lavender or 1 tsp dried culinary lavender
2/3 cup milk, plus extra for glaze
Preheat oven to 425. Grease and flour a large baking sheet. (Or use a stone if you have one). Sift flour and baking powder together in a large bowl. Mix in the butter until the mixture looks like fine bread crumbs. Stir in sugar and lavender (save a small amount to sprinkle on scone tops)Add enough milk to make a soft, sticky dough. Turn dough onto a well floured surface. Knead gently and flatten into one or two rounds (depending on how big you want the scones. I like to cut mine into wedges, some like rounds. Cut about 1 inch thick. Place on prepared baking sheet (or stone). Brush tops with dash of milk and sprinkle with lavender. Bake 10 – 12 minutes. Enjoy!!!
I usually use my food processor to make the dough. Just don’t process too long or dough will be tough. And if you use a convection oven – less time.
