Dulche de leche is basically caramelized milk and sugar. Cooked slow. It looks like butterscotch pudding (ask Kayte…and her boys!!!)but MUCH better and very, very sweet. I have been making dulche de leche the dangerous way (boiling a can of sweetened condensed milk in a pot of water) for several years with no problem. Just don’t leave the room and let the water boil out. I make, usually, Bannoffee Pie with it. But it also makes good ice cream, is good in/on cup cakes or on/in cakes, etc. But I have never made cookies with it.

    Dulce de Leche Duos

Until now. And these were sweet, chewy, and delicious. The cookies have dulce de leche in them. Butter. Brown Sugar. How can you go wrong with that?? YOU. CANNOT…. But you can make them BETTER!!! How you ask.

By making them double delicious – sandwich some dulce de leche BETWEEN two of the cookies. And THEN drizzle them with a simple chocolate ganache (Preferably Dorie’s.) Can you say AAAHHHHHH!!!!!

I have to hide these from myself (now where did I put those…. Yeah. Right!!) And from the Men of the house. Most of them , undrizzled, are in the freezer. But they won’t be there long. Half of the recipe gave me 35 cookies. Plenty.
