It is January and for many of us that means the usual reminder to ourself to eat healthier!! If you were one of the many then this Ellie recipe is for you.

    Walnut and Dried Cherry Bars

YUM!! Look at all those pieces of dried fruit and nuts!! And with a glass of cold milk……
…………….perfect snack!!

Mix together some

    rolled oats,
    applesauce {mine had cinnamon in it}
    chopped dried cherries {I used dried mixed berries with blueberries, cherries, cranberries}
    top with apricot preserves {Of course I didnt’ have any, so I used apple jelly.}right before they are finished baking

and what you end up with is a chewy, cakey, tender breakfast bar just as Ellie promised.

If you buy health bars for breakfast – Stop Now!! – and make these instead.
