I like pasta dishes that are quick, adjustable, and tasty. This one definitely fits the bill. Rigatoni pasta tossed with pancetta, onions, and Pecorino Romano Cheese. Four basic ingredients. That’s it.
This dish is also known as, according to Hazan, Pasta alla Gricia and is typically made with quanciale which is basically not available in the US so he subbed in Pancetta.
While I liked it, bites can be rather bland if they don’t include the onions and pancetta. I would use a smaller pasta next time. Still good tho’.
