Do I really need to go any further than the picture?
Okay, Fine…
Before Christmas Kayte, Phyl, Abby, Renee, and I were baking cookies and this was one we made.

Caramel Crumb Bars
These cookies begin with a sweet crust pressed into a 9″ x 13″ pan.
While the crust is chilling you crumble the remaining dough for the topping and set aside.
The filling is made with butter, corn syrup, dark brown sugar, and sweetened condensed milk. Mix these really LOW calorie ingredients together, simmer, boil, thicken, and cool. When cooled the filling is poured into the chilled crust, covered with the crumble topping and baked at 350° until the filling is bubbling, a deep caramel color and the dout is baked through. About 30 minutes.
What you end up with is…..
.. whole lot of caramely deliciousness!!!
I may have over baked these a tad, the crust was a little brown, but the caramel was deep, dark, and delicious.

Well yea, I’m always looking for a low calorie alternative this new year…. Mwahahahahaha. This one looks perfectly wonderful with all its buttery, sugary goodness. Thanks for sharing Margaret! I’ll bet they didn’t last long.

That there is a whole pan of bar cookie deliciousness. Every time I let a crust get brown I think of Dorie Greenspan who minces no words in her dislike for underbaked crust.

I just made these about two weeks ago for my quilt group. They were delicious, and I wasn’t ‘forced’ to eat them all myself! I took photos, so I should post them before I forget. Thanks for jogging my memory.

Those look delicious! I’m quite sure if I put half of them in the freezer I’d end up with a broken tooth.

Ooooh, I made these last year and loved them too! I left a huge stack in Shane’s parents’ freezer after house sitting one time, and they were VERY happy 🙂

Great photos of all of this, these were so good that seeing them again makes me want to whip up another batch…I am always interested in things with caramel.
