Creamy Cauliflower Soup sans Cream
It was very comforting with wedges of buttered toast and a small sprinkle of fried prosciutto. And all it took was 6 simple ingredients. I say it was healthy because there was no cream in the soup and only 1 TBL each of EVOO and butter. The rest of the ingredients added only flavor.
I know there are a lot of people out there who are not fond of cauliflower. Fortunately it was one of few veggies I really liked as a child so making this soup was not a big leap for me. I KNEW it would be good. It’s nice not to be disappointed.

From being in this group and learning about French cooking… it is amazing how they transform simple ingredients into gourmet fare. Prosciutto is OK in my Italian book.

Yummy! I liked this one a lot, too. Maybe it was the bacon I used, but I didn’t find the cauliflower taste too overwhelming.

I just thought this soup was delicious and I’m glad you liked it also. Yes, there are many people who are not cauliflower lovers but I was surprised at how many of us actually liked this soup. It’s smooth and silky and, oh so white. I really enjoyed your pictures. Very nice.

Agreed … it was wonderfully cozy. It seems many people added bacon or some other pork garnish … I went with the mussels and it was delicious.

The poor cauliflower! Why do so many people dislike it? Buttered toast is a great idea. Very warming and homey.

This looks wonderful…soup nut that I am, I also love cauliflower, so really need to pull out the soup pot and give this one a whirl soon. Yours looks really good.
