Mac and Cheese!
I can do Mac and cheese.
Even when it’s call dressy pasta ‘risotto’! Next time you want to make mac and cheese, instead of your regular ingredients. use chicken broth, mascarpone, and Parm. And lots of pepper!
This was nice and creamy and peppery. It was perfect with B’s ribs on New Years Day. Along with the cabbage and black eyed peas.
The only thing I would change would be to use less Parm cheese. We like it, but not THAT much (1/2 cup).

Sounds like a great combo. I always get mac&cheese when it’s a choice when we go out for BBQ.

yes LOTS of pepper! I’m not a fan of LOTS of pepper, but with this dish, it was necessary!

I used a lot of pepper as well! It was so nice and I did not put any parmesan just a bit of goat cheese but it was so so tasty!

LOL- we evidently love Parmesan because we topped our dishes with more when serving. Ok, I AM Italian 🙂 Glad you enjoyed it. It was a winner all around.

That’s a classic combination! I didn’t mind the Parmesan and added more to make up for the lack of mascarpone.

This was good – I am sure changing up the cheeses would be fun (just in case one wanted a little less parmesan in their life)
