Tonight was salad night. A different salad than I usually fix. Instead of using chicken I used some grilled Salmon. Simply fixed with salt, pepper, and olive oil. I fixed mine in a grill pan.
Baby spinach tossed with a simple vinaigrette, almond slices (which I forgot to toast), and fresh Basil. The salad was supposed to include caulirice but I didn’t have any.
It was a good salad. The Basil added some great flavor. I have to admit I wasn’t a big fan of the vinaigrette so I used another recipe.

Looks good, Margaret. I didn’t do the cauliflower either…frankly we just don’t care for it so I threw in some grilled asparagus cut into pieces and that was good. Thanks for suggesting this one, it was a great dinner salad…we will make this again.
