This was a perfect morning for muffins. It’s a little cool outside (under 80 degrees), a little cloudy, and a little breezy. Why is this a perfect morning for muffins? Because every morning is perfect for muffins. DUH!!
Start your day with these:
Banana Blueberry Muffins

1 1/2 cup AP flour
3/4 cup Sugar ( I used 1/4 cup sugar and 1/2 cup Splenda)
1 1/2 tsp Baking Soda
1/4 tsp Salt
1 cup mashed ripe Bananas
1/2 cup melted butter
1 egg
2 1/2 Tbl milk
handfull blueberries.
Preheat oven to 350.
In a large bowl combine flour, sugar, baking soda, and salt. I another bowl combine melted butter, milk, and mashed bananas. Add to dry and stir until moistened
Spoon batter into prepared muffin tins. Press a few blueberries into top of each muffin. Bake @25 minutes until golden brown.
Makes about 12.
I also tried to make these a little healthier. I added about 1/4 cup flax meal to the dry ingredients. Adds a little fiber without changing the taste or texture.
What you see are Texas or Giant muffins. Fewer to snack on later!!! It makes 6 giant. Baked about 30/35 minutes in the convection oven at 350.
