When I first looked at this recipe I thought it was going to be difficult to put together, but in her post Kayte assured us it was actually quite easy. And it was. The hardest part was getting the edges of the rice wraps to NOT curl up like saran wrap. But if you pick them up gently from the warm water they are easy to handle. Sticky, very sticky, but easy to handle!!
I made mine exactly as the recipe stated except(which means of course it ISN’T exact!!) in the sauce I used lemon juice instead of lime juice. The limes were icky looking at the store. I also used green leaf lettuce for the same reason. Nothing worse than brown Red Leaf Lettuce.
Made with shrimp (called for 2 per roll, I used 4 medium), carrots, lettuce, and rice noodles rolled up with fresh Basil ( I had to go buy a Basil plant because that was the only way to find any…..) and Mint leaves they are extra tasty with the light sauce of rice vinegar, siracha, green onions, and fish sauce. I cut back on the siracha just a tad and it was a perfect blend of sweet and hot.
So now I can proudly say that not only can I make General Tso’s Chicken, Pho from Steamy Kitchen via Daring Bakers, and Pot Stickers(also Daring Kitchen via Use Real butter – I can also make Summer Rolls. It’s enough to make a Southern Belle Cry……

Oh, those look wonderful, and love your subs. That’s the great thing about summer rolls, the possibilities are endless, and it is a great way to use up that little bit of this or that from the night’s dinner before. Fun to hear you excited about these. I could have sworn you were probably not venturing forth with this…what do I know anyway? Great photos.

Ick. I hate gross looking produce — limes, lettuce, all of it. Your subs sound great. I think I’d honestly prefer the green lettuce anyway. I didn’t think it was worth the bother for the red lettuce at all. Orange and green is a much prettier color combination, :).
I’m glad you enjoyed these. I always sort of dread making them because I’m convinced it’s time consuming, but I think once you get the process down it’s much quicker. Your spring rolls look just perfect.

It seems like I was the only one who had a hard time with the rice paper… maybe it’s because I also fight with plastic wrap every time as well? Yours look great! I love cooking Asian foods – there is such variety with just a few different ingredients. Yum!

Oh nice, your vietnamese rolls look delicious! I like eating solely the rice wraps. They are yummy and gummy alone.
I’m not sure how you make yours, but one way to use the rice paper wraps is to dip the rice paper in a bowl of warm water, then rest it on something like a bowl. It’ll go limp in time and you won’t have to fish it out of the water. If you were already doing that–cool beans ;]

Good for you Margaret! They look fantastic 🙂 I’ve never made summer rolls either, but all of the posts for CEiMB this week are making me think I better get on it! They’d be a great lunch for me and so many options for fillings.
