Do you know how hard it is to make a choice? Not hard choices. Simple choices. What to have for dinner. Which blue jeans to put on. Where to hide your favorite cookies (What, I said that outloud….). What’s also hard is picking A recipe you know about 30 people are going to try and decide if they liked your choice. I did that in December for TWD (Low and Lush Chocolate Cheesecake). (I think that went over well.)
So this month it was my turn to choose one of April’s recipes for Craving Ellie in my Belly and it was just as hard even though I had 15 or so recipes already marked. In the end I went with seafood –

Garlic-Basil Shrimp
Ellie described this dish as easy, fast, and delicious. And she was right.

Just Seven simple ingredients not including the orzo – EASY!!
It goes together in less than 15 minutes (once you have peeled and deveined the shrimp) – FAST!!
Shrimp, White Wine, and basil – DELICIOUS!!
The white wine simmers down to produce a light sauce with the garlic, tomatoes, and basil. And with the al dente orzo – it is perfect.
Unfortunately (or maybe fortunately…) The Guys didn’t care for it. But that’s okay – just means more for me. And I Liked It.
I did have to use dried basil because I forgot to buy some fresh. I used about 3/4 TBL instead of the 1/4 cup fresh. And yes, you do see some green – I chiffanaded (Can I use that in past tense??) some Fresh Baby Spinach to add some extra color.

Sorry I did not get this made before I left, but I will make it as I know it will be a big hit, everyone loves shrimp. When I saw that you had picked this one, I smiled as it just seems so “you” with the shrimp and all from Louisiana. Looks just great the way you photographed it, too…yep, will double post next week with this included. Thanks for picking it as I have been wanting to make it.

This was a GREAT choice. We really liked it. How could the boys not like it?! Better see a Dr. and get their taste buds examined.
This recipes a keeper for me too. I did use the fresh basil. There is so much difference in a dish when you can use fresh herbs.

Yummy! I have totally fallen off of the Ellie bandwagon. I don’t know what happened to me! I remember seeing this one listed though and thinking, oh yeah…sounds good! Looks like a terrific choice, so I’ll have to give it a try soon. And I need to get back in the groove with CEiMB!

So quick and easy with good but not great, flavor:) I think it would be really good with some fresh spinach or arugula added in. I will give that a try the next time I prepare this. Another idea that I might try is subbing some canned tomatoes with basil and garlic (drained) or some variety of Rotel (ya’ know me and my Rotel!). I just kept wanting this dish to have more kick.

I’m so sorry I didn’t get this CEiMB recipe made in time this week – it looks and sounds delicious. Great choice! I will definitely be making it this weekend. Basil is, by far, my favorite herb, and you can’t go wrong with shrimp. And I agree that it’s hard to pick a recipe for the group to make – there are so many good ones to choose from!

I do know how hard it is to make choices and for some reason, I struggle with the simplest ones every day! What will not be a hard choice is deciding to try this dish tonight 🙂 It looks wonderful and we love shrimp and pasta!
